Food No. 5 - Mama Cordice’s delicious crab meat and spinach stuffed mushrooms.
This is so easy and so scrumptious. It has no carbs but it does have a sprinkling of grated Parmesan cheese (which, of course, is a processed food that is not really a good food for humans).
My mother is an amazing cook and i especially love her stuffed mushrooms and she uses bread crumbs in hers which gives a lovely crunch; but, i can not eat bread made from flour because it only makes me hungrier and like magic, it makes me gain weight! Ugh!! God forbid! So no refined carbs for me. What to do, then when i want a stuffed mushroom? easy. i make these:
Just make up some kind of stuffing. It does not have to have crab meat in it. i just happened to have a can of horrible crab meat (i couldn’t even tell whether it was really a crab in that can or not - there was not even a hint of a lump of crab in there). Anyway, to get rid of that can of crab from my pantry i decided to toss it into the stuffing and it was perfect! I added the minced up mushroom stems with plenty of onion and garlic and i put some red bell pepper minced up just for a touch of color because the whole thing seemed too beige for my taste. Food should be beautiful. The green of the spinach is nice. i used fresh spinach. Make sure that your stuffing is not soupy. Strain it if you have to and get the extra moisture out before stuffing your caps.
Stuff caps, drizzle with a good olive oil and broil until browned like above. Doesn’t take long at all so it depends on your broiler. i’ve got a wonderful vintage Chambers range and it doesn’t take 5 minutes for these things to be broiled to perfection.
